Implementation of the project
The implementation of the project includes the following Work Packages (WP):
WP1: Isolation of extracts with a high content of bioactive compounds
Tasks:
- Utilization of winery by-products as raw material for the extraction of anthocyanin-rich fractions
- Optimization and standardization of the extraction process in medium/large scale
- Detailed characterization (qualitative and quantitative) of anthocyanin-rich fractions based on NMR, GC-MS and HPLC-DAD-MS analyses
- Characterization of anthocyanin-rich extracts from different wine varieties (Mavrotragano, Syrah, Merlot)
Deliverables:
- Anthocyanin-rich fractions
- Technical document describing the optimized protocol for large scale productions of anthocyanin-rich extracts
WP2: Qualitative and Quantitative characterization of extracts and in vitro assessment of their bioactivity
Tasks:
- Assessment of selected anthocyanin-rich extracts bioactivity through in vitro studies entailing the investigation of their antioxidant and neuroprotective effects
- Characterization of anthocyanins metabolites in cellular cultures through HPLC-DAD and HPLC-MS/MS analyses following established protocols
Deliverables:
- Identification of extracts with high abundance in bioactive compounds (anthocyanins)
WP3: Preparation for commercialization of novel, anthocyanin-rich products
Tasks:
- Business plan development
- Cost estimation (each individual step of the production process and final product)
- Estimation of anticipated sales and financial plan development
- Marketing plan development

WP4: Health claim application submission to EFSA
Tasks:
- Results submission to EFSA for health claim approval
